Getting my Quaker used to my hands without biting

I have a new Quaker, going on 5 1/2 months old, that I have had now for a 1 1/2 weeks. I was getting Sprite (my Quaker) used to me petting and rubbing his belly and one night he just didn't want to go back into his cage. I did eventually get him in without trying to trap or scare him. The day after he was going to try and bite me if my hands even got close to him. It's as if he lost trust and became scared of my hands. I did have him out of his cage today and he got on my shoulder and we shared an apple. He even let me pet him without to many attemps of biting but my qustion is how do you get a Quaker to get used to your hands? I have had another quaker ( my daughters) for 2 years and although you can grab him and pick him up he still will act as if he will bite you if you put a finger near him. Is it just a matter of time or are they naturally defensive of hands when their near their cage?
