It may seem a little difficult to do, but you really have to stand up to them. As hard as it is (believe me, I know) you have to try to not react or move away when they bite you. Pulling away or shrieking in pain will only reward them (remember, birds are drama queens/kings :)
If your pionus is sitting on your hand when he bites you, wobble your hand enough to make him lose his balance, but not fall. This interrupts the bite. Then you have to replace the behaviour. I once had a friend in my bird club who had an amazon who would lunge and bite her. She managed to stop the behaviour, and replace it with the amazon attacking his toys when he wanted to vent anger, instead of her. Whatever you do, don't give up. Good luck!
