First of all, I want to thank you for taking in an older grey that needs a home. Exactly how long have you had her? It sounds like your father may remind her of a good person in her past or she just has a crush on him (there was an interesting Bird Talk article on this a few months ago). Would your father be willing to do some UP and DOWN training with her for 10 minutes or so a day? It would probably be easier for him to teach her some basic commands since she already seems to have a desire to please him.
