They should be left with their parents until they are completely weaned, but sometimes it doesn't always work out that way. Last baby my finches had they started plucking her as soon as she came out of the nestbox and before she was weaned, so I had to remove her and try to get her to eat on her own. I would take her into her parents every 3 hours at first, and they would feed her, but once they were done they would try to pluck her so I had to make sure I removed her as soon as they finished feeding her. I kept nestling food and adult food in her cage and would sprinkle it along the bottom, which is where she eventually started to eat from, and cleaned the paper out several times a day. Luckily it was one of those funny shaped cages that she would fly to the top and into a little crook to where when she pooped it ended up outside the cage and not where her food was. Also since she hadn't learned to drink from a dish or bottle yet, I had to use a syringe and teach her to drink from that. She had just started to figure out the bottle and was eating adult seeds and pellets completely on her own when she went to rainbow bridge, which was a week after I had to remove her from her parents.
You should be able to tell what sex they are as soon as all the feathers come in.
